El Tesoro slowly ages the Añejo tequila in American oak ex-bourbon barrels for two to three years. This aging process imparts a stronger influence of oak but still allows the spirit to maintain the complexion of agave. You’ll taste a hint of maple sweetness with notes of red fruit acidity, vanilla and caramel.

All of their organic waste—the pencas that are cut off the agaves, the weeds that grow during the rainy season, the pulp from the cooked agave—goes into compost. The water Tesoro uses on production gets recycled, and they are about to install solar panels for energy at the distillery. In the agave fields they're also using all-natural herbicides and fertilizers as well as biologic pest control.
